Tasting Note
Lemon and pear with green apple, white flowers, subtle butter and pastry, lively citrus acidity and a saline, chalky minerality. Medium–full, satiny texture with a persistent, slightly herbaceous finish.

Western: roast chicken with herbs, lobster or scallops with brown butter, mushroom risotto, pork loin with thyme. Asian: miso-glazed black cod, seared tuna/sushi (fatty cuts), Cantonese roast pork, steamed fish with ginger & scallions.
Production Method
Organically farmed fruit, hand-harvested, whole‑cluster pressed; native-yeast fermentation in oak (and some ceramic/foudre), ~20% new oak for village/lieu-dit, aged ~10–14 months, light fining and filtration, low SO2.
