Tasting Note

Perfumed red cherry, strawberry, rose and spice with underbrush, graphite and savory earth; silky texture, fine-grained tannins, bright acidity and a long, lingering mineral finish.

Western: roast pigeon or duck, beef bourguignon, mushroom risotto, aged soft cheeses. Asian: Peking duck, miso-glazed black cod, soy-braised short ribs, Cantonese roasted pork.


Production Method

Hand-harvested Pinot Noir; native-yeast fermentation with partial whole-cluster; ~18 months ageing in French oak (high new-oak percentage); largely bottled unfined/unfiltered.
