Tasting Note
Perfumed red-fruit core of cherries and raspberries with rose/peony florals, warm spice, graphite and subtle tobacco; silky fine tannins, vibrant acidity and a very long, tensioned finish.

Western: roast duck, beef or veal fillet, game birds, mushroom risotto, truffle and aged soft cheeses. Asian: Peking duck, soy-miso grilled wagyu, char siu or hoisin-glazed pork, shiitake/umami mushroom dishes.
Production Method
Hand-harvested Pinot Noir; mostly whole-cluster fermentation (2019 slightly less whole-bunch), short prefermentation maceration, gentle pigeage; aged in French oak barrels (significant new oak), bottled after winter.
