Tasting Note
Pronounced citrus and yellow-fruit (peach, apricot) with crushed limestone/mineral and saline notes. Rounded, ripe mid-palate with subtle oak spice, grilled brioche and a long, saline finish.

Pneumatic press; 12–24h enzymatic settling; indigenous yeast fermentation partly in stainless steel and partly in oak; systematic malolactic; aged 8–10 months, light fining and filtration.
