Tasting Note
Generous, full-bodied Chablis: honeyed orchard fruit, peach, apricot, quince, butter-pastry and underlying flinty mineral notes. Textured, layered and slightly creamy with ripe fruit and a long, sappy, savory finish.

Western: grilled/roasted lobster, scallops in beurre blanc, creamy seafood pasta, roast chicken with herb butter, foie gras; Asian: miso‑glazed black cod, seared scallops with soy‑butter, lobster tempura, Hainanese or soy‑roasted chicken, delicate sushi (fatty cuts).
Production Method
Pneumatic pressing, natural enzymatic settling, fermentation with indigenous yeasts partly in stainless steel and partly in barrel, systematic malolactic fermentation and élevage ~8–10 months with a proportion of new/used oak.
