Tasting Note
Powerful, mineral-driven Chablis with citrus, green apple and peach, plus oyster-shell, flint and subtle smokiness. Concentrated, saline palate with firm acidity, fine phenolic grip and a long iodine-tinged finish.

Western: oysters, turbot, monkfish, lobster, roast poultry, beurre blanc dishes. Asian: sushi, sashimi, tempura, gyoza with yuzu, miso-glazed fish, Thai seafood salads.
Production Method
Pneumatic pressing; natural enzymatic settling 12–24h; fermentation with indigenous yeasts in stainless steel and partially in barrel; systematic malolactic; 8–10 months élevage in barrels (mostly used; small % new); light filtration.
