Tasting Note
Dense, elegant Pinot Noir: truffle-tinged black cherry, boysenberry and plum, violet and rose floral lift, spicy licorice and iron-mineral earth, fine-grained tannins and a long, filigree finish.
Food Pairing
Western: roast duck with foie gras, venison fillet with mustard, roasted Bresse chicken, mushroom risotto. Asian: Peking duck, Korean bulgogi, char siu, miso-glazed aubergine, shoyu-grilled salmon.
Production Method
Hand-harvested fruit; c.50% whole-cluster fermentation; native yeasts; 12–18 months élevage in 60–80% new Allier/Nivernais oak; very low yields (~25 hl/ha).
