Tasting Note
Dense, ripe black and morello cherry, raspberry and spice with underbrush, rose and subtle smoky oak; succulent mid-palate, firm yet fine tannins and a long mineral finish.

Food Pairing
Western: roast duck breast, game (venison), roasted chicken, mushroom risotto. Asian: Peking duck, miso-glazed salmon, char siu, Korean BBQ short ribs, mushroom hot pot.

Production Method
Partial whole-bunch (c.40%), low yields (~24 hl/ha), élevage in c.80% new oak; traditional Burgundian vinification.
