Tasting Note
Ripe red and black fruits—raspberry, cherry and plum—layered with rose petal, orange zest, sous-bois, truffle and subtle smoke. Silky yet powerful, with refined oak, sweet ripe tannins and saline minerality, finishing long and precise.

Food Pairing
Western: steak au poivre, roast lamb, mushroom risotto, boeuf bourguignon, aged cheeses (Comté, Époisses). Asian: Peking duck, Cantonese roast pork (char siu), Korean BBQ (bulgogi), miso-glazed dishes, mushroom hotpot.

Production Method
Hand-harvested fruit; entirely destemmed; indigenous-yeast fermentations (2–3 weeks) in small open vats; aged 16–20 months in French oak (approx. 80% new).
