Tasting Note
Raspberry and Morello cherry with potpourri, spice and toasty vanilla oak; supple mid-palate, chewy yet silky tannins, licorice hints and a long, precise finish.
Food Pairing
Western: roast duck, stuffed capon with ceps, beef bourguignon, mushroom risotto. Asian: Peking duck, char siu (roast pork), miso-glazed aubergine, mushroom ramen.
Production Method
Hand-harvested; cool maceration and partial whole-cluster fermentation (≈30% whole bunches in 2022); fermented in small vats and aged in French oak (≈40% new) for about 14–18 months.
