Tasting Note
Aromas of red fruit and violet; lively, fruity palate of morello cherry with delicate gourmandise, discreet oak and supple yet majestic tannins, finishing with good length.

Western: roast duck, beef bourguignon, mushroom risotto, grilled lamb; Asian: Peking duck, char siu, miso-glazed eggplant, shiitake stir-fry, soy-ginger marinated pork.

Production Method
Hand-harvested; fermentation in small vats with indigenous yeasts and limited whole clusters; aged 14–18 months in French oak (≈40% new), light–medium toast.
