Tasting Note
Perfumed and floral (violet, wild rose) with red and black cherry, raspberry and subtle anise. Silky texture, mineral core, fine succulent tannins and a long, persistent, elegant finish with hints of leather and spice as it ages.
Food Pairing
Western: roast duck, duck à l'orange, roasted lamb, beef tartare, mushroom risotto, pâté/foie gras. Asian: Peking duck, miso‑glazed black cod, char siu pork, grilled shiitake or enoki, soy‑glazed wagyu, ramen with pork chashu.
Production Method
Hand‑harvested Pinot Noir; ~40% whole‑cluster fermentation (2020); matured in 100% new French oak; low yields, light extraction; bottled with minimal fining/filtration.
