Tasting Note
Concentrated dark‑red Pinot with cassis, wild plum, red berries, peony and forest floor; chalky, fine tannins, tangy acidity and a long mineral finish. Firm and broody now—rewards extended cellaring.
Food Pairing
Roast duck, confit or Peking duck; grilled or braised lamb; beef short rib or venison; mushroom risotto; coq au vin; aged Comté or Gruyère. Asian pairings: char siu, miso‑glazed black cod, teriyaki beef, Korean bulgogi, shiitake and soy braised dishes.
Production Method
Hand‑harvested Pinot Noir with a high whole‑cluster component (c.85%), cool cellar fermentations, partial destemming and élevage in French oak (c.33% new in this vintage) for about 12–18 months.
