Tasting Note
Black cherry and black raspberry with blood orange, dried flower, sweet tobacco and truffle. Broad, richly textured palate with plush dark-fruit layers, saline minerality, refined grip and a long savory finish.

Food Pairing
Western: roast duck, mushroom risotto, herb‑crusted lamb, pork loin, coq au vin. Asian: Peking duck, char siu pork, miso‑glazed salmon, shiitake fried rice, pork bulgogi.

Production Method
Hand‑harvested (Sept 8 & 11); small‑lot fermentations; aged 15 months in 45% new French oak barrels (Tonnellerie Remond).
