Tasting Note
Lacy, elegant Pinot—black cherry and black raspberry framed by savory thyme/rosemary, sleek acidity, fresh apple-skin tannins and a haunting, lifted perfume. Graceful, poised and long-finishing.
Food Pairing
Western: roast duck, mushroom risotto, pork tenderloin, grilled salmon. Asian: Peking duck, char siu, miso‑glazed black cod, shiitake soba, teriyaki salmon.
Production Method
Hand-harvested estate fruit (Dijon 115 & 777); small-lot fermentations; aged 16 months in French oak (44% new, Tonnellerie Mercurey).
Vineyard Info
DuMOL planted and farms the small Wildrose Estate (the original DuMOL site); highly allocated, estate-focused production from mature vines.
