Tasting Note
Powerful, mineral-driven Chardonnay with citrus, pear, white flowers, baking spice, toasted almond and saline minerality. Oily texture, concentrated mid-palate and a very long, persistent finish.
Food Pairing
Lobster with beurre blanc, scallops, creamy mushroom risotto, roast chicken, pork belly; Asian: miso-glazed black cod, ginger-scallion lobster, Cantonese steamed fish, richer dim sum and lobster dishes.
Production Method
Hand-harvested fruit; pressed without crushing, settled then fermented in oak (ambient yeasts), aged on fine lees with significant new oak influence (~40–50%).

Domaine Etienne Sauzet, established 1920s in Puligny-Montrachet; owns a small Bâtard parcel (~0.14 ha). Converted to organic (2006) and biodynamic practices (certified ~2013).
