Tasting Note
Concentrated Chardonnay: green apple, lemon, white flowers, wet limestone and sea-spray minerality, with spice, toasted almond and a saline, lingering finish.
Food Pairing
Western: roast chicken, lobster, mushroom risotto, creamy pasta, aged Comté. Asian: miso-glazed cod, soy-ginger scallops, tempura, sushi (white fish), mildly spiced Thai/Chinese seafood dishes.
Production Method
Hand-harvested from biodynamically farmed parcels; pneumatic pressing; barrel fermentation and ageing (c.12–20 months) with partial new French oak (c.25–40% in 2022); full malolactic and extended lees ageing with bâtonnage.
Vineyard Info
Domaine Etienne Sauzet, founded in the 1920s, owns ~10–15 ha in Puligny and environs. Now run by Émilie Boudot and winemaker Benoît Riffault; organic/biodynamic practices in place since mid-2000s.
