Tasting Note
Concentrated red and dark berries with violet and rose petal, exotic spice, grilled-meat and mineral notes. Silky yet firm tannins, sappy core and a long confit-like finish.
Food Pairing
Roast duck, lamb, beef bourguignon, mushroom risotto; Asian: Peking duck, char siu, miso-glazed eggplant, soy-teriyaki salmon, shiitake noodle dishes.
Production Method
Hand-harvested Pinot Noir, destemmed, fermented in concrete/temperature-controlled vats, matured in (reported) 100% new oak and aged ~18–20 months before bottling.
Vineyard Info
Produced by Emmanuel Rouget (successor/nephew to Henri Jayer) from a tiny Cros-Parantoux premier-cru holding (~0.72 ha). Estate follows low-yield, meticulous viticulture and traditional Burgundian élevage.
