Tasting Note
Deep plum and black cherry with violet and truffle notes, cigar-box spice and dark cocoa. Plush, velvety texture with firm, grainy tannins, saline minerality and a long, spicy finish.
Food Pairing
Western: roast lamb, grilled ribeye, mushroom risotto, aged Comté or Manchego. Asian: Peking duck, char siu, Korean BBQ short ribs, braised beef noodles, shiitake mushroom hot pot.
Production Method
Hand-harvested Merlot from tiny parcels; fermented and matured entirely in new 225‑L French oak barriques and aged about 20 months; low-yield viticulture.
