Tasting Note
Perfumed red berries and warm cranberries with sous‑bois, Provence herbs and subtle coffee/chocolate notes. Satin texture, fine-grained tannins, vibrant acidity and saline minerality lead to a long, elegant finish.
Food Pairing
Western: roast duck, mushroom risotto, roast pork belly, grilled salmon, lamb ragu. Asian: Peking duck, miso‑glazed black cod, char siu pork, yakitori, Korean bulgogi, shiitake hot pot.
Production Method
Certified organic/biodynamic. Hand‑harvested; indigenous yeast fermentation with ~25% whole clusters, moderate maceration; matured ~13 months in French oak (c.20–30% new); bottled unfined and unfiltered, screwcap.
