Tasting Note
Concentrated dark cherry, wild strawberry and spice with crushed herbs, nori-like savoury lift and spiced chocolate. Silky, medium–full palate with fine-grained tannins and long, mineral-tinged finish.

Food Pairing
Western: roast duck, lamb shank, mushroom risotto, beef bourguignon. Asian: Peking duck, char siu, miso-glazed salmon/black cod, soy-ginger pork, shiitake-ginger stir-fries.

Production Method
Biodynamic viticulture; hand-harvested, ~25% whole-cluster, wild-yeast fermentation, moderate maceration, 13 months in French oak (c.30% new). Unfined and unfiltered; gravity-flow winemaking.
