Tasting Note
Perfumed, concentrated Pinot Noir: violets, dark cherry, raspberry, wild herbs, baking spice and cedar. Silky yet muscular tannins, bright acidity, layered dark-fruit core and a very long, mineral-driven finish.
Food Pairing
Western: roast lamb, mushroom risotto, duck à l'orange, pork tenderloin. Asian: miso-glazed black cod, char siu pork, Peking/roast duck, teriyaki salmon, mild kimchi dishes.
Production Method
Estate biodynamic farming (Demeter/BioGro). Grapes gently destemmed to open-top fermenters; ~25% whole clusters; indigenous yeasts and wild malo; long maceration; 12–13 months in ~25–30% new French oak; bottled unfined and unfiltered.
