Perfumed and precise: raspberry leaf, peony and crushed blackberry with black pepper, smoke and orange-peel hints. Fine, powdery tannins, bright acid and a haunting, long finish of red fruit and floral spice.
Food Pairing
Roast duck, mushroom risotto, herb-crusted lamb, grilled salmon, pork belly; Asian: miso-glazed salmon, Korean BBQ (bulgogi), char siu, seared tuna with soy-ginger, mushroom hotpot.
Production Method
Biodynamically farmed fruit; gentle destemming with ~25% whole clusters, native-yeast open-top fermentations, moderate maceration, aged ~13 months in French oak (20–30% new); bottled unfined and unfiltered.
