Tasting Note
Pure dark-red cherry, pomegranate and wild raspberry with crushed herbs, sumac spice and smoky mocha. Chalky, chocolate-like tannins, taut acidity and a long, saline finish — structured and age-worthy.
Food Pairing
Western: roast duck, venison, pork belly, mushroom risotto, aged cheeses. Asian: Peking duck, char siu pork, miso-glazed salmon or aubergine, Korean BBQ (bulgogi), shiitake & soy dishes.
Production Method
Biodynamic, organically farmed; hand-harvested; indigenous yeast fermentation with ~25% whole clusters, moderate maceration; matured ~13 months in French oak (c.30% new); bottled unfined/unfiltered under screwcap.
Vineyard Info
Felton Road (Bannockburn) established from Elms plantings in 1992; estate farms multiple certified organic/biodynamic vineyards (The Elms, Calvert, MacMuir). Small-production, hands-off philosophy under winemaker Blair Walter.
