Tasting Note

Pure black and red fruit (cassis, plum, blackberry) with violets, cedar, tobacco and graphite. Medium–full-bodied, fine-grained tannins, bright freshness and chalky minerality leading to a long, savory finish.


Food Pairing

Western: roasted beef, lamb, venison, mushroom ragout, aged hard cheeses. Asian: Peking duck, char siu, bulgogi (Korean BBQ), teriyaki beef, mushroom-based Chinese or Japanese dishes.


Production Method

Hand-harvested; plot-by-plot vinification in stainless steel and wood; gentle extraction and malolactic fermentation; aged ~15–18 months in French oak (high proportion new oak).
