Tasting Note
Opaque purple; aromatics of blackberry, violet, lavender, smoked meat, graphite and black pepper. Full-bodied palate of concentrated dark berries, dark chocolate and savory herbs, silky texture, bright acidity and firm, fine-grained tannins; very long floral finish.
Food Pairing
Grilled/ribeye or hanger steak, braised short ribs, roasted lamb, beef stew, hearty chili; Korean BBQ (galbi/bulgogi), Peking duck, char siu, mapo tofu, miso-glazed eggplant.
Production Method
Fermented with ~25% whole clusters; blended with small amounts of Mourvèdre and Roussanne; aged ~20 months in French oak (about 70% new for Syrah). Minimal filtration, Rhône-style approach with stem inclusion.
