Tasting Note
Ripe black cherry and plum with truffle, new leather, violet and spice. Silky, medium-to-full body, supple tannins and an elegant, lingering earthy finish.
Food Pairing
Western: roasted lamb chops, braised short ribs, mushroom risotto, venison. Asian: Peking duck, char siu, soy-braised beef, shiitake/miso dishes and richer Chinese/Southeast Asian red-meat preparations.
Production Method
Hand-harvested. Fermented in concrete and stainless vats, aged 16–18 months in French oak barrels (c.30–50% new). Traditional vinification on the Pomerol plateau.
