Tasting Note
Concentrated Grand Cru Chardonnay: layered white orchard fruit, lemon zest, beeswax, hazelnut, warm spice and wet-stone minerality. Rich, broad-shouldered with vibrant acidity and a very long, age-worthy saline finish.
Food Pairing
Western: butter-poached lobster, seared scallops, roasted chicken, creamy pasta, aged Comté. Asian: miso-glazed black cod, soy-poached lobster, sashimi/otoro, tempura, Cantonese roast pork.
Production Method
Hand-harvested; native-yeast fermentation (stainless steel), aged ~11–12 months in French oak (≈1/3 new); light fining and slight filtration.
