Tasting Note
Floral (pressed yellow flowers) with candied orange peel, apricot, honeyed orchard fruit, toasted hazelnut and subtle spice. Rich, rounded mid-palate with saline minerality, moderate oak and a long, slightly drying finish.

Food Pairing
Western: lobster with beurre blanc, roasted scallops, creamy chicken or poultry, aged soft cheeses (Époisses, Chaource). Asian: miso-glazed black cod, seared scallops with soy-butter, Cantonese roasted duck, richer sushi (toro) or creamy Japanese/Thai dishes.

Production Method
Hand-harvested fruit; fermentation in oak barrels with indigenous yeasts, regular bâtonnage on the lees and élevage for ~12–18 months with ~30–40% new oak.

Domaine Fontaine-Gagnard is a family estate in Chassagne-Montrachet descended from Gagnard-Delagrange holdings; now run by the Fontaine family, it owns parcels in several Grand Crus including Criots-Bâtard-Montrachet.
