Tasting Note
Intense oyster-shell and flinty minerality with hazelnut, white peach, orange rind and quince. Very concentrated, lively and slightly reductive on entry; toasty new‑oak present but integrates with aging.

Western: lobster, scallops, butter-poached fish, roasted chicken, creamy risotto. Asian: miso‑glazed cod, tempura, steamed sea bass with ginger, sushi (fatty tuna), Cantonese lobster with light soy-butter.
Production Method
