Tasting Note
Dense blackcurrant and blackberry with violet, graphite, pencil lead, tobacco and baking spice. Concentrated, full-bodied with velvety yet firm tannins, bright backbone and a long mineral-tinged finish.

Western: grilled ribeye, entrecôte, roast lamb, venison, aged hard cheeses. Asian: Peking duck, char siu, Korean BBQ (bulgogi), Szechuan beef, beef rendang, grilled wagyu.
Production Method
Hand-harvested and double-sorted; fermented in stainless/concrete vats, malolactic fermentation and aged ~18 months in ~60% new French oak barrels.
