Tasting Note
Dark cherry and plum with underbrush, wet earth, leather, tobacco and spice. Firm, fine-grained tannins, bright acidity and a savory mineral finish — concentrated and ageworthy with a long, savory aftertaste.
Food Pairing
Western: roast beef, braised short ribs, lamb, duck confit, beef bourguignon. Asian: Peking duck, char siu (Cantonese roast pork), Korean BBQ (galbi), mushroom or beef hot pot (sukiyaki-style).
Production Method
Hand-harvested; grapes 100% destemmed; traditional cuvaison ~20–25 days; aged ~16–18 months in cellar (French oak/stainless regimes as used by the domaine).
Vineyard Info
