Tasting Note
Deep garnet with aromas of cassis, black cherry, graphite, cedar, tobacco and menthol. Medium-full-bodied with fine-grained, firm tannins, balanced acidity, a savory mineral core and a long, tobacco-laced finish. Excellent ageing potential.

Roast or grilled beef, lamb, game, hard cheeses; western: roast ribeye, beef stew, aged cheddar. Asian: Peking duck, Korean BBQ (bulgogi), char siu, beef rendang, braised beef with soy/ginger, mushroom stir-fries.
Production Method
Hand-harvested; long maceration (~3 weeks); fermentation in temperature-controlled vats; aged 16–18 months in French oak (≈75% new).
