Tasting Note
Concentrated blackcurrant and blackberry, violet and pencil lead, cedar and dark chocolate; firm ripe tannins, saline minerality and spice, finishing long and graphite-tinged.

Western: roasted lamb, rib‑eye steak, beef short ribs, game and mature cheeses. Asian: Peking duck, Korean BBQ, beef with black pepper sauce, miso-glazed aubergine, char siu.
Production Method
Hand-harvested, destemmed, fermented in temperature-controlled vats, élevage in French oak (c.75% new) for c.16–18 months; Eric Boissenot consultant.
