Roast beef, leg of lamb, venison, mushroom sauces and aged hard cheeses (western); Peking duck, char siu, braised beef short ribs, soy/ginger-marinated dishes, mushroom hot pot (Asian).

Traditional Pomerol vinification: separate fermentation by variety in small/concrete vats, extended maceration and ageing in French oak barrels (circa 18 months historically/typical).
