Tasting Note
Golden with emerald reflections and very fine bubbles. Fresh menthol and pink grapefruit on the nose, lemon and baked-apple patisserie notes mid-palate, with candied ginger and star anise; long, tonic, mineral finish with citrus and pineapple echoes.

Food Pairing
Western: oysters, scallop carpaccio, ceviche, fish rillettes, grilled white fish, parmesan, roast poultry, braised veal. Asian: sushi/sashimi, tempura, steamed dim sum, scallops with ponzu, light Thai or Vietnamese seafood salads.

Production Method
Traditional method (méthode champenoise). Fermented in stainless steel, no malolactic, extended lees ageing (≈8–10 years), Brut dosage (~7 g/L), hand-disgorged. Limited production.

Vineyard Info
Champagne Gosset, founded 1584, is one of the oldest houses. Celebris Blanc de Blancs 2012 was a limited cuvée (≈15,000 bottles) highlighting Grand Cru Chardonnays.
