Tasting Note
Golden with a fine persistent mousse; aromas of pear, grapefruit, brioche and almond; palate shows citrus, vanilla, gooseberry, red-fruit notes and a long saline, mineral finish.

Food Pairing
Western: oysters, scallops, roasted chicken, poultry with cream, soft cheeses, foie gras. Asian: sushi/sashimi, dim sum, lemongrass chicken, Thai citrus dishes, Vietnamese spring rolls.

Production Method
Traditional méthode champenoise; blend fermented and aged on lees for ~10 years, disgorged before release; finished as Extra‑Brut with ~4.8–5.5 g/L dosage.
