Tasting Note

Evolved St‑Julien: cassis and plum with tobacco, cedar, leather, tar and a hint of mint. Silky yet firm tannins, rich mid‑palate and a long, mineral-tinged finish.


Food Pairing

Western: roast beef, lamb, game, aged hard cheeses, mushroom risotto. Asian: Peking duck, Korean BBQ (galbi), char siu, beef hot pot or braised beef with mushrooms.


Production Method

Hand-harvested; fermented by plot in cement/stainless vats with 21–35 day maceration; malolactic in barrels; aged ~16–18 months in French oak (≈30% new).
