Tasting Note
Opaque black-fruited Syrah with smoked meat, espresso, black cherry, olive, licorice, graphite and crushed pepper; massive yet refined—mounting, grainy tannins, saline minerality and a very long, savory finish.
Food Pairing
Western: roast lamb, venison, braised beef short ribs, duck confit, aged hard cheeses. Asian: Peking duck, char siu, Korean BBQ (galbi), soy/hoisin-braised beef, rich mushroom hotpot.
Production Method
Hand-harvested, sorted and vinified largely whole-cluster (rarely destemmed); ~4-week fermentation with continuous pump-overs; aged ~40–42 months in 100% new French oak barriques made by Guigal.
