Tasting Note

Deep blackcurrant, wild blueberry, violet and graphite aromas. Medium–full bodied with silky ripe tannins, saline minerality, black truffle, licorice and cocoa layers; poised, very long finish.

Food Pairing

Western: grilled ribeye, roasted lamb, braised short ribs, aged cheddar; Asian: Peking duck, char siu (Cantonese BBQ pork), Korean BBQ beef (galbi), miso-glazed eggplant.

Production Method

Estate-grown, low-yield hillside vineyards; hand-sorted, small-lot fermentations and élevage in French oak barrels. Team emphasizes earlier picking for freshness and dry-farming/sustainable practices.

Vineyard Info
