Tasting Note
Concentrated blackcurrant and plum with tobacco, cedar, smoke, truffle and dark chocolate; silky, mellow tannins, low acidity and a profound, mineral-driven, very long finish.
Food Pairing
Western: roast lamb, aged beef, venison, duck, mushroom risotto, aged hard cheeses. Asian: Peking duck, char siu, Korean BBQ, beef rendang, miso-glazed eggplant.
Production Method
Hand-harvested; fermented with malolactic conversion; matured in French oak (90% new barrels) and bottled July 1991.
