Tasting Note

Reserved, smoky red with black cherry, plum, tobacco, cedar and forest-floor notes. Medium-full, velvety Merlot texture, precise acidity and a long, mineral-driven finish.

Western: roast lamb, rib‑eye, duck confit, mushroom risotto, aged hard cheeses. Asian: Peking duck, char siu, Korean BBQ (galbi), soy‑braised beef short ribs, miso‑glazed eggplant, shiitake mushroom dishes.


Production Method

Hand-harvested, destemmed and fermented in double-skinned stainless-steel vats; matured 18–24 months in French oak (76% new for 2004).
