Tasting Note
Deep garnet; concentrated black cherry, plum, tobacco, graphite, cedar and baking spice. Silky yet powerful palate with fine-grained tannins, vivid minerality and a long mocha/espresso finish.
Food Pairing
Western: roast lamb, beef tenderloin, duck confit, aged hard cheeses. Asian: Peking duck, char siu, soy-braised beef short ribs, Korean barbecue, mushroom hotpot.
Production Method
Hand-harvested (8 Sept–5 Oct 2015), fermented in vats and aged ~18–20 months in 78% new oak barrels; bottled June–July 2017.
