Tasting Note
Layered black and blue fruits (blackberry, plum, raspberry) with sage, bay and cracked black pepper. Velvety palate of dark chocolate, cedar and spice, fine powdery tannins, bright acidity and an exceptionally long, spice-driven finish.

Food Pairing
Western: grilled or braised beef, roast lamb, game, beef stews, braised short ribs, BBQ. Asian: Sichuan pepper beef, Korean BBQ, char siu, Peking duck, spicy lamb skewers, soy-braised or teriyaki dishes.

Production Method
Fermented in traditional open-top concrete vats with full malolactic fermentation. Matured 18 months in hogsheads (9% new, 91% seasoned; 80% French, 20% American). Bottled under screw cap.

Mount Edelstone single‑vineyard (planted 1912); own‑rooted centenarian Shiraz on deep red-brown clay‑loam. Farmed by the Henschke family; single‑vineyard bottlings produced since 1952.
