Food Pairing

Western: roast duck, mushroom risotto, grilled salmon, pork tenderloin, beef bourguignon. Asian: Peking duck, miso‑glazed black cod, char siu pork, shiitake ramen, Korean BBQ pork.

Production Method

Estate biodynamic farming; hand‑harvested, barrel‑selected from oldest blocks; native yeast fermentations with gentle extraction; aged in French oak (approx. 35–40% new).
