Tasting Note
Ripe pear, almond and dried-fruit aromas with citrus and stone-fruit undertones; toasted oak and minerality support a rich, chiseled palate with long, persistent fruit and a saline finish.

Western: roasted lobster or scallops with beurre blanc, roasted chicken, salmon, creamy Beaufort or blue cheeses. Asian: salmon maki/sushi, prawn curry or Thai green curry, miso-glazed cod, tempura prawns.
Production Method
Hand-harvested Chardonnay, pressed and vinified by the Hospices de Beaune; fermented and aged in French oak barrels with partial malolactic fermentation and 12–18 months élevage; aged post-auction by Albert Bichot.
