Tasting Note
Perfumed, soil-driven Pinot Noir: red and black cherry, cranberry, wild berries, violet, spice, espresso and saline minerality. Medium-bodied with supple dusty tannins, bright acidity and a tangy, long, marmalade-tinged finish.
Food Pairing
Western: roast duck, lamb loin, mushroom risotto, beef bourguignon, coq au vin. Asian: Peking duck, char siu or soy-braised pork, miso-glazed salmon, shiitake soba, Korean bulgogi.
Production Method
Hand-harvested Pinot Noir; traditional fermentation (often indigenous yeasts); matured 16–18 months in French oak barrels (≈30–40% new).
