Tasting Note
Intense black fruit (blackberry, blueberry), cracked black pepper, spice, leather and walnut compote; full-bodied with creamy entry, dense fine tannins and a long, spicy finish.

Roast lamb, venison, grilled ribeye, braised short ribs, aged pecorino and charcuterie; Asian: Peking duck, Korean BBQ (bulgogi), char siu, Sichuan pepper beef, teriyaki beef.

Production Method
Hand-harvested, double-sorted; fermented ~40 days in small French oak vats/barrels; malolactic in barrel; aged ~18 months in new/mostly-new French barrique; magnum-only release.
