Tasting Note
Perfumed red and black cherry, plum, violets and peony with orange oil, iron/saline minerality and warm spice. Medium–full, velvety texture, bright acidity and fine-grained tannins, finishing long and mineral-driven.
Food Pairing
Western: roast duck, mushroom risotto, lamb, roasted chicken, pork tenderloin. Asian: Peking duck, miso‑glazed salmon, char siu pork, teriyaki beef, shiitake and soy dishes.
Production Method
Fully destemmed fermentation (ambient yeast) in open wooden vats (15–20 days); aged ~18 months in barrel (≈15% new oak), racked twice, finished short tank ageing and bottled.
