Tasting Note
Dark brambly cherry and raspberry with floral violets, subtle spice and mineral undertones. Medium-bodied, fleshy mid-palate, firm yet polished tannins and a persistent, savory finish.

Food Pairing
Western: roast duck, herb‑crusted lamb, beef bourguignon, mushroom risotto. Asian: Peking duck, char siu pork, soy‑glazed mushroom dishes, mildly spiced Szechuan duck.

Production Method
Sustainable viticulture; 100% destemmed fermentation (ambient yeasts) in open vats for ~15–20 days; aged ~18 months in oak (c.15–25% new), racked then finished in tank before bottling.

Clos de la Maréchale is a 9.76 ha Mugnier monopole owned since 1902, returned from a long lease in 2004; oldest vines date to c.1910, notable as the largest monopole in the Côte d’Or.
